Hand forged kitchen knife with shirogami (white paper) core

Over two days, a group of three students are guided by Rowan through each step of the knife making process to create a unique, beautiful and high performing tool to use in your kitchen that is stamped with your initials.

New for 2025, the course is now focused on the laminated blade, using a pre laminated three layer blank that features a shirogami (white paper) high carbon steel core.

After forging, the laminated blade is finished with a wide bevel grind, the great value of this material and grind is that the blade geometry can be maintained for the life of the knife as the wide bevels are thinned during the sharpening process.

Processes:

  • Hand forge: Working the steel orange hot on anvils with hammers, the full first morning is dedicated to forging the blade.

  • Profile: Grinding the blade to shape, a range of kitchen knife templates are available for students to choose including a Japanese gyuto & bunka and a European chef.

  • Heat treat: Quench and temper for a hardness of 60-61Rc.

  • Grind wide bevels: Grinding to a fine edge ready for stone thinning & sharpening.

  • Handle work: Components, shaping, tang / handle glue up.

  • Sharpen: Learn a straightforward progression using an Atoma diamond plate, Shapton Pro water stones & leather strop

Cost:

  • Cost: $950.00 p/person

  • Deposit: A 25% deposit is required upon booking and the remainder due upon receipt of final invoice two weeks before course commencement.

  • Cancellation policy: We don’t offer cancellations but we are very happy to swap dates if needed or transfer your deposit to another person.

    *We will be relocating our workshop to the The Mill in Castlemaine at the beginning of 2025.

  • Time: 9.00am for a 9.15am start, through to about 4.00pm depending on progress.

  • Course size: We have a maximum of three participants per course which allows for a high level of tuition.

  • Minimum age: 16.

  • In the event that a course date falls on a high fire danger day, the course may need to be rescheduled.
